Creamy, bright, and deeply flavorful, this Za’atar Hummus brings a Middle Eastern twist to a classic favorite. Finished with earthy za’atar spice and a drizzle of olive oil, it’s a simple, nutrient-packed dish perfect for sharing — or savoring all on your own.
Za’atar Spice Blend (makes 2 Tbsp)
1 tsp dried thyme
1 tsp ground coriander
1 tsp sumac
1 tsp toasted sesame seeds*
¾ tsp ground cumin
¼ tsp aleppo pepper (optional)
¼ tsp dried oregano
1/8 tsp salt
Hummus
2 cups cooked chickpeas
¼ cup tahini
¼ cup extra virgin olive oil, plus more for serving
3 Tbsp fresh lemon juice
2 cloves garlic
2 Tbsp water
½ tsp salt
In a small bowl, add Za’atar spice blend ingredients. Stir gently to combine and set aside.
Add chickpeas, tahini, olive oil, lemon juice, garlic, water, salt and 1 Tbsp of the Za’atar spice blend to a food processor. Process until very smooth, about 1-3 minutes, stopping occasionally to scrape down the sides, if necessary. Season to taste with additional salt, if needed.
When ready to serve, transfer hummus in a bowl and smooth the surface with the back of a spoon. Sprinkle additional Za’atar blend over the top, along with a drizzle of olive oil, if desired. Serve at room temperature.
