The Casado Plate

The traditional lunch of all Ticos is called a casado. It comes in countless variations depending on the day, the kitchen, or the soda (local restaurant), but it’s always built around rice and beans. Casado means “married,” and the dish is a marriage of bright flavors and colors. Common casado plate additions are fried plantains, sliced avocados, a fried egg, corn, picadillos, and sliced vegetables.

Hearts of Palm Ceviche
Nixtamal Tortillas, for serving
Fried Green Plantains
