Before eating this, I never imagined this hairy-looking tuber could taste so good. With a flavor similar to kettle cooked popcorn (but less sweet), it’s a tasty side dish.
1 medium taro, peeled and cut into small 2-inch wedges
2 tablespoons vegetable oil
1 tablespoon sugar
1 tablespoon cooking sake
2 tablespoons mirin
Preheat oven to 400 degrees.
Toss taro wedges with vegetable oil and place on a baking sheet in a single layer.
Bake for 20 minutes.
Meanwhile, mix sugar, sake, and mirin in a small sauce pot and heat until sugar is dissolved.
While taro is still hot, toss with sweet sauce in a large mixing bowl until coated.
