Chai Tahini Granola

Servings:
8 (6 cups)

Ingredients

2 tsp ground cinnamon
¾ tsp ground ginger
½ tsp ground cardamom
½ tsp ground cloves
¼ tsp ground nutmeg
1 Tbsp coconut sugar
2 cups old fashioned rolled oats
¾ cup roughly chopped raw pecans
½ cup raw sliced almonds
½ cup unsweetened coconut flakes
1/3 cup roughly chopped raw pistachios
¼ cup hulled hemp seeds
½ tsp salt
½ cup pure maple syrup
¼ cup tahini
2 tsp vanilla extract
½ cup golden raisins

Directions

Preheat oven to 325 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper or a silicone baking mat.

In a large bowl, add cinnamon, ginger, cardamom, cloves, nutmeg and coconut sugar. Stir to combine. Add oats, pecans, almonds, coconut flakes, pistachios, hemp seeds and salt. Gently stir until ingredients are incorporated.

In a small bowl, whisk together maple syrup, tahini and vanilla extract. Fold maple syrup mixture into the oat mixture, making sure to coat the dry ingredients evenly and well.

Spread granola mixture evenly on prepared parchment lined baking sheet. Bake for 30 minutes, stirring halfway, until lightly golden and fragrant. Remove from oven and stir in golden raisins. Let cool completely before storing in an airtight container.
